De oogst vindt plaats 10 tot 15 dagen voordat de druiven hun optimale rijpheid voor wijn bereiken, om een bepaalde frisheid te behouden.<\/li>\n<li><strong>Vinificatie: <\/strong>De druiven van Ch\u00e2teau Bonnet worden zorgvuldig geselecteerd en koud geperst. Het sap ondergaat een langzame pasteurisatie, waarbij het eerst wordt opgewarmd tot 35\u00b0C, vervolgens langzaam verhoogd naar 72\u00b0C om gisten en ongewenste micro-organismen te elimineren, en daarna geleidelijk weer wordt afgekoeld naar 35\u00b0C. Dit proces duurt in totaal 90 minuten en zorgt voor een optimale behoud van aroma\u2019s en smaak.
