  • Harvest Time: In September, the manual harvest allows for the selection of the best grape clusters at perfect ripeness. The destemmed and crushed grapes remain in contact with the skins, undergoing cold maceration for several hours to extract the primary aromas typical of the grape variety. The must, obtained through gentle pressing, is cold-settled, immediately filtered, chilled, and stored in tanks until fermentation. Fermentation is carried out in autoclaves using the Martinotti (Charmat) Method at a low temperature.The fermentation proceeds slowly until reaching an alcohol content of 7.0-7.5%, after which it is stopped by cooling. During bottling, sterile filtration retains the yeasts, preventing any further fermentation of the product.

  • Taste Profile: Bright straw yellow with golden highlights. The perlage is fine, lively, and persistent. Intensely aromatic, with the typical fragrance of Moscato grapes, featuring notes of yellow peach, ripe apricot, and hints of acacia and linden blossom. Sweet and harmonious, with a good balance between acidity and sugars.
  • Serving Temp: 8–10°C.
  • Food Pairing: Moscato Rovero pairs well with desserts, leavened pastries, petits fours, and fruits like figs and melon. It is also recommended to pair it with savory foods such as fresh or semi-aged cheeses with delicate flavors.
